I was in a pinch and this easy quick tahini paste came through but was is worth is. Results below!
What Happened to the Tahini? I swear it was there…..
I was making my charred eggplant hummus which is a hybrid of baba ghanoush and hummus. The beans were cooked and the eggplant charred over a gas burner until it was soft.
I went to the cupboard and the cupboard was bare, no tahini. After a few cuss words I thought I was going to have to do a store run but I looked on the top shelf and I saw a large container of roasted sesame seeds.
Was It Possible
I remembered seeing recipes on the internet so I grabbed my phone and I was in luck. Two ingredients seeds and oil.
What is Tahini, What is it’s history, and is it Healthy
Who cares your not here for that so lets get to the recipe and see if it works. First I only have a cheap Black and Decker blender so I am a little skeptical, plus I have roasted seeds.
Well into the blender!
I started with one cup of seeds and will add oil as needed. The freshness of the seeds and the power of the blender will determine the amount of oil you will need.
Commercial tahini makers don’t add oil because they have much better equipment that extracts the oil from the seeds.
The Process
Roast the seeds in a dry pan or the oven until they start browning. This will really give the tahini a better flavor. Skip this step if you have roasted seeds.
Blend 1 cup of seeds until they start to make a paste (right picture). Shake the blender to knock the seeds back into the blade. Add three tablespoons of oil and keep blending at higher speeds until a paste is formed (left picture). Add more oil if necessary but be careful not to add to much. Taste and add a pinch of salt if needed.
Tip
Once you have a paste like the picture on the left you can add a lot more seeds and the texture will remain the same.
The Results
I liked it and it definitely worked for my recipe.
Pluses
- The flavor was very good
- I could make exactly what I needed so I won’t have to deal with hard and separated tahini that has sat in my pantry
Minuses
- It wasn’t as smooth as a commercial brand but maybe a powerful blender will solve that.
